These Soft & Crunchy Oatmeal Cookies are a perfect mix of chewy and crisp — made with oats, a hint of vanilla, and a touch of honey or brown sugar. Simple, wholesome, and ready in less than 30 minutes!

Ingredients

  • 1 egg

  • 1 tsp vanilla extract

  • ½ cup brown sugar or honey

  • 2 tbsp melted butter or olive oil

  • 1 cup ground oats

  • 1 cup rolled oats

  • Pinch of salt

  • 2 tsp baking powder (about 11 g)

  • Some chopped nuts (optional)

  • A handful of chocolate chips

Instructions

Step 1
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a bowl, whisk the egg with vanilla.

Add the brown sugar (or honey) and melted butter (or olive oil). Mix until smooth.

Add both oats, baking powder, and salt. Stir until the dough comes together.

Fold in nuts and chocolate chips.

Shape into small balls and place on the baking sheet, leaving space between each.

Bake for 12–15 minutes or until lightly golden.

Notes

  • For a refined sugar–free version, use honey instead of brown sugar.

  • Add raisins or cinnamon for extra flavor.
