Ingredients
1 egg
1 tsp vanilla extract
½ cup brown sugar or honey
2 tbsp melted butter or olive oil
1 cup ground oats
1 cup rolled oats
Pinch of salt
2 tsp baking powder (about 11 g)
Some chopped nuts (optional)
A handful of chocolate chips
Instructions
Step 1
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
Step 2
In a bowl, whisk the egg with vanilla.

Step 3
Add the brown sugar (or honey) and melted butter (or olive oil). Mix until smooth.
Step 4
Add both oats, baking powder, and salt. Stir until the dough comes together.

Step 5
Fold in nuts and chocolate chips.

Step 6
Shape into small balls and place on the baking sheet, leaving space between each.

Step 7
Bake for 12–15 minutes or until lightly golden.
Step 8
Let cool slightly before serving.
Notes
For a refined sugar–free version, use honey instead of brown sugar.
Add raisins or cinnamon for extra flavor.
Store cookies in an airtight container for up to 5 days or freeze for up to 2 months.
