Ingredients
2 cups rolled oats (gluten-free optional)
9 Medjool dates, pitted
½ cup olive oil (or melted butter)
¼ cup honey
2 large apples, peeled and grated
1 tsp baking soda
1 tsp cinnamon
¼ tsp salt
2 large eggs
Instructions
Step 1
Preheat oven to 350°F (175°C).
Step 2
Add oats, dates, honey, olive oil, grated apples, eggs, cinnamon, baking soda, and salt to a blender.
Step 3
Blend until smooth and creamy.
Step 4
Grease or line a loaf pan with parchment paper.
Step 5
Pour in the batter and spread evenly.

Step 6
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
Step 7
Let it cool completely before slicing.
Step 8
Serve plain, or top with yogurt, nut butter, or a drizzle of honey.
Notes
For extra texture, stir in some chopped walnuts or raisins before baking.
Substitute maple syrup for honey if vegan.
Store in an airtight container for up to 4 days, or freeze slices for up to 3 months.
